Cap management. The skins float and dry out, and the colour and tannin you paid for are in them. Punch down or pump over three times a day for the whole of the active ferment, and stop when the fruit tastes right rather than when the calendar says so.

The sulphite figure is worked out against the pH of the finished wine, not of the must. Malolactic and deacidification both raise pH, and dosing a finished red to its must pH under-protects it by roughly a third. Recompute for your own reading.
Method
- 01Destem and crush. Take a Brix, a pH and a TA reading of the must before you touch anything else.
- 02Sulphite the must lightly, around 50 mg/L, and leave it four hours before pitching.
- 03Pitch and ferment on the skins at 24 to 28C, punching down three times a day.
- 04Press at or just after dryness. Press gently: the hard press fraction is astringent and worth keeping separate.
- 05Inoculate for malolactic and keep it at 20C until it finishes. Do not sulphite until it has.
- 06Rack off the gross lees, top up completely, and add the oak. Taste it every fortnight and pull the oak when it is right, not when the bag is empty.
- 07Bulk age a year, racking every three months, then bottle.

Every number on this page came from a hydrometer reading and a pH reading. Without those two you are following a recipe rather than making a wine, and the sulphite figure in particular is meaningless without a pH you have actually measured.
