What decides this wine

The pH, which is the one thing perry punishes. Pear juice regularly arrives at 3.9 or above, where sulphite barely works and spoilage organisms thrive. Acidify the juice into the low threes before you pitch, not afterwards.

The sulphite figure is worked out against the pH of the finished wine, not of the must. Malolactic and deacidification both raise pH, and dosing a finished red to its must pH under-protects it by roughly a third. Recompute for your own reading.

Method

  1. 01Measure the pH first. Add tartaric to bring it to 3.5 or below before doing anything else.
  2. 02Sulphite at 50 mg/L and leave 24 hours.
  3. 03Pitch and ferment cool, 15 to 18C.
  4. 04Rack when it stops. The gravity will settle around 1.000 rather than 0.995 because of the sorbitol, and that is normal.
  5. 05Bulk age at least six months: young perry tastes of very little.
